Cutting Plate
This piece of steel is a sacrificial plate and will be periodically replaced as it gets dinged up. The purpose here is to protect the surface of the anvil when using a hand held chisel to cut through a piece of steel.
If you look carefully at the left end of the plate, you will see a stove bolt. The hardy shank is bolted on rather than welded to make it easier when it comes time to replace the plate. When one side is dinged up, you can flip the plate over and use the othe side. Once both sides are dinged up, then the plate can be replaced with a new piece of steel.
